I was lucky enough to run in to this handsome fella’, Urijah, at the Atherton Market this weekend. He’s there almost every weekend with his mom – you may know her, Bianca Miller. This Saturday was one of those days that I feel sooooo lucky to have a market in town like Atherton. It’s not only convenient – it’s a time to support our local farmers and enjoy our community (something I feel is a lost concept these days) I love going to the market – making my loop, catching up with friends and talking food with the farmers. I don’t think there is a day that I go to the market where I don’t run into several people from the gym or bootcamp. So, if you haven’t been – GO!
Below is a recipe made from 98.9% of ingredients from the market on Saturday (the avocado was my local downfall)
1 lrg pork tenderloin: salt, pepper, garlic powder. Grill on high heat to sear – then lower heat and leave on grill until cooked to medium. Let sit for 5-10 minutes before slicing.
1 lb of okra and homemade almond meal: slice okra in discs – place in bag with 1/4 grapeseed oil, 1 egg, 1 cup almond meal, salt & pepper to taste. Mix well. Heat another 1/4 cup of grapeseed oil in saute pan over medium/high heat. Carefully place okra into pan and cook until almond meal is browned and okra is soft.
Smokey peppers and tomatoes: slice several multi-colored peppers, chop one clove of garlic and half tomatoes. Heat grapeseed oil in pan over medium heat. Add garlic and saute for about a minute. Add peppers and tomato. Then add paprika flakes, dried basil, salt & pepper. Saute for another 5 minutes.
